Cellar for up to 7 years. Serve chilled. The creators of 689 Cellars chose the name after visiting Asia and experiencing Chinese culture where certain numbers are considered to have special lucky or auspicious characteristics. The number six, for example, is thought to represent movement or flow, empowering us to live with energy and happiness, while the number eight is linked with unlimited potential and prosperity thanks to its symmetrical shape. Finally there’s the number nine, one of the most important numbers, which is related to permanence and longevity. These lucky numbers certainly seem to have helped 689 Cellars create some truly delicious wines like this Chardonnay. Fruit for this cuvee is selected from top quality plots in Sonoma's Russian River Valley, and Napa's Carmeros and Monterey County sub-regions where conditions are ideal for growing elegant and refined Chardonnay. Once in the winery the grapes are carefully sorted and vinified with the young wine ageing in French oak barrels for 8 months before bottling. This helps to add a rich, creamy texture and seductive hints of caramel, vanilla, and toasted oak to the intense tropical and stone fruit notes from the Chardonnay grapes. A great wine to share with family and friends alongside a big platter of cheeses, leafy summer salads, or roast chicken.
