Cap Classique is South Africa’s answer to Champagne, an elegant sparkling wine that is made according to the traditional method with a secondary fermentation in the bottle. Using the same technique that is used for Champagne helps create delicious toasty brioche notes, tiny bubbles and a silky smooth texture on the palate. This version is crafted from Pinot Noir grapes which gives the wine a beautiful salmon hue and inviting notes of fresh strawberries, raspberries and red cherries. The wine is fermented in the barrel and then aged on the lees in the bottle for 18 months before disgorging. The result is a rich, creamy mouthfeel with ample bright red fruit flavours and delicate bubbles which seem to melt away on the tongue. The crisp flavour profile makes this a great aperitif or partner for cheeses, charcuterie and all manner of salads and seafood dishes. Lothian Vineyards is owned by the Wilson family who have been making wine on the Cape for three generations. With support from talented head winemaker Richard Kershaw who holds the revered Master of Wine title, Owners Gavin and Ewen have adopted a Burgundian approach to winemaking with a focus on purity of flavour and exceptional quality across their diverse range of wines.
