Cellar for up to 5 years. Serve chilled. The Cronks left behind their corporate lives in London and moved to rural Provence with their young family to chase a dream of making wine in southern France. With the help of Master of Wine Angela Muir, the couple released their first wine in 2011 and have enjoyed immense success all over the globe thanks to their delicious rosé wines which truly capture a taste of the sunny Côte d’Azur. A relatively new addition to the Mirabeau family is this charming sparkling rosé named La Folie. The wine is crafted from four traditional Provencal varieties, Cinsaut, Syrah, Grenache and Collombard, with the grapes carefully harvested at night to keep the natural freshness and typical aromatic character. Once in the winery the grapes are vinified following the Charmat method which is also the technique used to produce Prosecco. The result is a gorgeous pale pink sparkling wine which exudes hints of grapefruit, lemon zest, white peach and crushed red berries on the nose. The first sip reveals mouthwatering freshness along with smooth tiny bubbles and notes of strawberries and raspberries. The light body and pure flavours make this an ideal wine to drink on a hot summer’s day on its own or alongside salads, fish dishes, and fresh seafood.
